Hum Honey has been blessed with Matt Golinski creating some absolutely divine recipes using our Hum Honey Cold Fusion range. This is a wonderful salad recipe using our Hum Honey Cold Fusion Lemon Myrtle Honey.

Serves 4

Ingredients:

500gm eggplant
100ml vegetable oil
400gm cooked chickpeas
1 red chilli, finely sliced
½ red onion, finely sliced
1 clove garlic, crushed
½ cup mint
250gm haloumi
40gm Hum Honey Cold Fusion Lemon Myrtle Honey
1 tsp Dijon mustard
50ml lemon juice
50ml olive oil
salt and pepper

 

Method:

Lightly brush the eggplant slices with oil and char grill until soft.

Cool and cut into 2cm strips.

Whisk together the Cold Fusion Lemon Myrtle honey, mustard, lemon juice and olive oil and season with salt and pepper.

Mix together the eggplant, chickpeas, chilli, red onion, garlic and mint.

Lightly oil the haloumi and fry or grill until golden. Toss through the salad with the dressing and serve while warm.
