Hum Honey has been blessed with Matt Golinski creating some absolutely divine recipes using our Hum Honey Cold Fusion range. This is a delicious recipe that would make a sensational light lunch using our Hum Honey Cold Fusion Lavender Honey.

Serves 4
Ingredients:
2 peaches, halved
2 peaches, finley sliced
60ml white wine vinegar
60ml extra virgin olive oil
2 tsp brown sugar
½ tsp sea salt
120gm goats cheese
150gm brioche, diced
50gm Hum Honey Cold Fusion Lavender honey
1 cup nasturtium leaves and flowers
Method:
Lightly oil the cut surfaces of the peaches and char grill until they are well coloured with char lines. Turn and grill for a further 3 minutes.
Whisk together the vinegar, oil, sugar and salt and gently toss through the finely sliced peach. Allow to stand for 5 – 10 minutes.
Lightly spray the brioche with oil or clarified butter and bake for 12 minutes at 180°C or until they are lightly browned all over.
Arrange the grilled and pickled peaches on four plates, with the goats cheese and brioche. Pour over the remaining pickling juices.
Drizzle with a generous teaspoon of Hum Honey Cold Fusion Lavender Infused Honey, and garnish with the nasturtium leaves and flowers.
