Serves 4
Ingredients:
800gm whole green prawns, peeled and deveined, heads and tails left on
2 punnets baby corn
30ml vegetable oil
60gm roasted cashews
1 cup Thai basil leaves
1 bunch watercress, picked
1 golden shallot, finely sliced
1 red chilli, finely sliced
50gm Hum Honey Cold Fusion Ginger Infused Honey
50ml soy sauce
50ml rice wine vinegar
1 tsp sesame oil
Method:
Whisk together the Hum Honey Cold Fusion Ginger Infused Honey, soy sauce, rice wine vinegar and sesame oil.
Lightly oil the baby corn and char grill until coloured all over.
Lightly brush the prawns with oil, season and char grill until just cooked through.
Toss together the prawns, corn, cashews, basil, watercress, shallot and chilli and dress with the Hum Honey mixture.
Arrange on 4 plates and pour over any leftover dressing.
Serve while warm.
